Tailgait New Orleans Style - BBQ Shrimp
1 lb. butter
2 tbs. Joe's Stuff, or any all-purpose seasoning blend (to taste)
1/3 cup Worcestershire sauce
1 tsp. lemon juice
5 oz. beer
1 tsp. chopped garlic
3-4 lb. Shrimp
Crank up the grill and melt 3/4 lb. butter in skillet. Then, sauté garlic, shrimp and seasoning. Cook for 2-3 minutes. Add beer, Worcestershire sauce and lemon juice. Cook for 3-6 minutes, until shrimp are cooked and liquid thickens. Add remaining butter and shake pan until butter is melted and mixture creams out. Serve with plenty of fresh bread to sop up da sauce!
Tailgaiting with the Best Shrimp Scampi
2lb bag frozen peel shrimp (21-25 per pound) or pre-peeled shrimp
3.5 cloves fresh minced garlic
Virgin olive oil
1/4 cup chopped parsley
1 lemon
Salt, Cayenne Pepper
1 Frying Pan
Prior to game (at home), run cold water over shrimp until they are unfrozen, completely peel shrimp. Then, store peeled shrimp in a freezer bag and transport to game in a cooler over ice.
Heat the olive oil (approximately a 5 inch diameter circle of oil) in the frying pan. Add minced garlic once to oil (oil should be hot, not burning or frying). Cut lemon in half and save one half. Take other half of lemon and cut in to quarters, save. Once garlic begins to brown, add all of the shrimp and stir. Keep stirring to make sure that the shrimp is evenly cooked. Once all of the shrimp are opaque and pink, remove from the heat.
In frying pan of cooked shrimp, add 1+ tsp salt, juice from the 1/2 lemon and about 2 tsp cayenne pepper. Mix.
Transfer to plate, top with parsley, and throw the lemon quarters on the side.
Tailgaiting with The Brats
• 1 package of your FAVORITE Brats
• 6-8 bottles of your favorite beer (Amber is best, no stout beers) or you may substitute with a pale ale or a cheaper brand as long as the beer is acceptable to drink
• 1 chopped white onion
• 3-4 tablespoons of real butter
• Minced garlic or garlic powder
Place pot large enough to hold a 6 pack+ of beer on a stove/grill/heating source. Add the beer, 3/4 chopped onion, minced garlic (add to your liking), and the butter. Heat the beer etc. at low-to-medium temperature. Add the brats and make sure that they are fully covered by the liquid. If they are not covered, add more beer.
Simmer on low to medium heat for 1 hour minimum (do not boil).
Heat the grill.
Remove the brats from the beer mixture and cook them on the grill, turning each brat frequently, until they are golden brown. Keep the beer mixture on low heat.
Once the brats are done cooking, place them back in the beer mixture until you are ready to serve.
Serve them on a roll or hot dog bun. Top with the condiments of your choice (spicy mustard, ketchup, relish, diced tomatoes, raw onion, etc.).
